Night two, and we pickedΒ Maple caramelised tofu with brussels, I picked this dish to cook purely because I’m not a massive brussel sprout fan and I have never mastered cooking tofu, so I thought it would be a good test. I actually hit a hole in one with the tofu, browning it was the key, I’m still not sure about brussels but this dish was nice, I drizzled a small amount of maple over once I had plated the dish, the maple does neutralised the bitter taste of the brussel sprouts and the pecans add a really nice texture
