I have been a little obsessed with sliced eggs ever since I had them at Microdot the other week, how they get those eggs so perfectly sliced is beyond me…. My sliced eggs are slightly more rustic/abstract and Mark has requested savoury mince this morning.

2 slices of toast
2 boiled eggs to your liking ( Lazy lady alert, I have an egg cooker)

Oil (whichever you like)
1/4 onion finely diced
1 garlic gloves
200g beef mince
1/4 cup of crushed tomatoes
1/2 teaspoon of smoked paprika
Chilli flakes
1 tablespoon of smokey BBQ sauce ( you can use tomato, chipotle or normal BBQ)
1 diced tomato

Start your eggs.

Put your onion in a frying pan over medium heat with a little bit of oil anywhere from a dash to a dollop will do, after your onions start to become transparent add your garlic and cook for a minute.

Stir through your smoked paprika and chilli flakes.

Add your mince and cook over medium high until brown.

Add your sauce, tomatoes and diced tomato.

Put your toast down.

Cook your mince on medium high heat until everything has mixed through and the sauce has thickened.

Peel those bloody eggs and slice.

Scoop your mince onto your toast, top with sliced eggs, salt and pepper to taste and eat.
